Mallige idli recipe | kushboo idli | How to make soft and spongy rice idli recipe. idli recipes are a very healthy breakfast recipes and it contain low calories thus it helps in reducing weight also, originally it was just rice based cake, but later, it has seen modified as different types based on their taste and can be prepared with various ingredients. one of a popular idli recipe from Karnataka and Tamilnadu cuisine is mallige idli or kushboo idli.

Serving for 30 idlis

Ingredients :

  • Black Gram Dal (without skin) (urad dal) 1 cup
  • idli rice or Salem idli rice 4 cups
  •  poha / aval / avalakki / flattened rice, thick 3/4 cup
  • sabudana / sago/ tapioca 50 grm

Direction

  • firstly, wash and soak urad dal in a bowl for six hours.
  • wash and soak the Salem rice and poha and sabudana in different bowls for 6 hours (poha is not required soaked for a such a long time ).
  • drain the water and grind urad dal separately in a mixer or a grinder to sleek and fluffy batter adding water as needed.
  • transfer the batter to a large bowl. keep aside.
  • same as uraddal drain the water first add sabudan and poha to the mixer or grinder while graning add idli rice and make a smooth batter.
  • mix both smooth batters altogether well.
  • now cover and rest in place for 10 hours or overnight until the batter ferments.
  • after 8 hours, batter doubles indicating well fermented
  • add one tsp salt to the batter and blend gently.
  • pour the batter into idli plate greased with oil.
  • place in steamer and steam for ten minutes on medium flame or until it cooks.
  • finally, soft idlis are able to serve together with chutney and sambar.
