Ingredients :

For the first marination of butter chicken, you need

  • salt 1/4 tablespoon
  • lemon juice 3/4 tablespoon
  • chicken 1/2 kg
  • red chili powder 1/2tablespoon

On the other hand, for the next marination, you need

  • oil 3/4 tablespoon
  • garam masala powder 1/2 to 3/4 tablespoon
  • turmeric powder 1/8 tablespoon
  • powdered dried fenugreek leaves 3/4 tablespoon
  • ginger garlic paste 1 tablespoon
  • Greek yogurt or thick curd 1/2 cup

Butter chicken sauce
For the preparation of the butter chicken sauce

  • ginger garlic paste 1 tablespoon
  • butter 2 tablespoons
  • dalchini
  • green cardamoms 2
  • pinch methi powder
  • cloves 2
  • green chillies 2
  • tomatoes of large size 4 that should be pureed and filtered,
  • red chili powder 1 tablespoon
  • ten cashew nuts
  • garam masala powder 1/2to 3/4 tablespoon
  • sugar 1/4 tablespoon
  • crushed fenugreek leaves 1/2 tablespoon
  • coriander leaves
  • chilled cream 80 ml
  • butter 2 tablespoons


  • The first step involves marinating the chicken with salt, chilly powder and lemon juice for at least twenty minutes.
  • In the next step, you need to repeat the process of marinating the chicken once again with turmeric powder, oil, yogurt, ginger garlic paste, kasuri methi, garam masala powder.
  • Now, you need to keep the marinated chicken in refrigerator for three to four hours. You will have the best results if you keep it in the refrigerator for the whole night.
  • Soak cashews in water for about an hour. Mix a little amount of water with these cashews and make a smooth paste out of it.
  • Make a paste of ginger and garlic. Make a puree out of the tomatoes.

Steps to prepare butter chicken

  • At first, you need to grill chicken on a stove top or oven. For stove grilling the chicken on the stove top, add the marinade and one tablespoon of butter.
  • Keep frying on high flame until all the moisture goes away. Stir continuously for ensuring that it does not burn. Make sure to cook until it is cooked completely. Take it out of the oven and keep it on a plate.
  • For grilling the chicken in over, you need to preheat the oven up to 240 C for twenty minutes. You should make sure to grill until the chicken is cooked in a proper manner.
  • Put butter on the pan and heat it. Add cloves, cinnamon, and cardamoms and fry it for at least one to two minutes.
  • Add green chilies, ginger garlic paste and continue frying until you get the fragrance.
  • Add the tomato puree and add sugar, chili powder, and salt.
  • Blend and cook till the tomato puree gets thick. It will start to leave the pan from its side.
  • Add one cup of water, cashew, fenugreek powder. Add water to get the desired consistency.
  • Keep the mixture for boiling and simmer for at least three to five minutes.
  • Add garam masala, kasuri methi, and the chicken. After mixing, keep it in summer for at least five to seven minutes. The chicken needs to be tender and soft.
  • After stirring for some time, you need to keep it in simmer for at least two to three minutes. Add chilled cream and turn the stove off.
  • Use extra cream and coriander leaves to garnish the butter chicken. You can enjoy this dish with roti, nan or rice.
