How to Make Chicken Dum Biryani| Chicken Dum Biryani Recipe|Hyderabadi Special Chicken Dum Biryani is a classic and popular recipe of mughul nizams, Chicken Dum Biryani is a kind of fragrant rice recipe prepared with a special type of rice called basmati rice , spicy Chicken gravy acts a layer on the flavored rice and topped with the aid of coriander leaves, fresh mint leaves, fried onion after which it is seasoned with the saffron milk. This dish is widely popular in Hyderabad. 

To prepare Chicken Dum Biryani we need to follow mainly 2 steps those are marination and cook the half boiled rice, for the marination purpose, you need to make use of oil and yogurt that will play a key role in making it tender.


For marination

•    Chiken (Half kg)

•    Yogurt or curd (half cup)

•    Oil or Ghee ( 2 or 3 tablespoons)

•    Green chilies paste

•    Fired onions(2 big onions)

•    Mint and Coriander leaves (handful )

•    Red chili powder (one tablespoon)

•    Turmeric powder (1/2 tablespoon)

•    Coriander powder (1/2 tablespoon)

•    Biriyani Masala powder (one tablespoon)

•    Salt (as per taste)

•    Ginger Garlic paste (one tablespoon)

For the preparation of biriyani rice

•    Basmati rice soaked in water for twenty minutes (two cups)

•    Oil or Ghee (one table spoon)

•    Shahai jeera (half tablespoon)

•    Green cardamom (Three)

•    Bay leaf (one)

•    Cinnamon (One large stick)

•    Cloves (Three)

•     Japatri/Javitri  (one)

•    Black cardamom (one)

•    Anise (One star)

•    Ginger Garlic paste (one tablespoon)

•    Mint and Coriander leaves (handful )

•    Lemon juice (one and a half tablespoon)

Preparation of the chicken dum biriyani :

To prepare chicken dum biryani recipe, In a bowl take chicken add Oil or Ghee, Salt,yogurt (curd), red chili powder, turmeric powder, coriander powder, brown onions(fried onions) ,Finely chopped mint and coriander leaves ,Green chili paste, Ginger garlic paste. Mix well and massage gently to the chicken . keep aside at least for an hour,For best result marinate chicken and keep in refrigerator for whole night.

Take a enough size of pan pour water into it keep on flame add whole spices ,salt, green chilies,ginger garlic paste, oil or ghee, lime juice,chopped mint and coriander leaves once water starts boiling add soaked basmathi rice to it cook half boiled rice and then drain it.

Take a vessel apply ghee on it and marinated chicken on top of it add half boiled rice add some more ghee on top of rice and then add chopped mint coriander leaves and some brown onions, take a half glass of saffron milk pour on top of it close with air tight lid ( you can use silver foul paper or dough) cook for 10 min on high flame and 20 min on low flame. Let it rest of 15 min. your yummy yummy Chicken Dum Biryani is ready and you can serve with raita or biryani gravy.
